Nathan’s food style is seasonally driven with an emphasis on big flavours while using the best produce Wales has to offer, all cooked over charcoal and live fire. At SY23restaurant he cooks over open fire to produce a 10 course menu in a modern and minimalist dining room. The menu consist of foraged and preserved ingredients from the local woodland and coastline making the food very personal to the area.
